The sun is shining, the birds are chirping and summer is on its way! Here is one of my all time favourite summer salad recipes made with just a few ingredients. This recipe incorporates all healthy foods to make for a great nutritious lunch!
Here is what you will need:
- 1 cup salad (iceberg and/or spinach)
- 1 cup cucumbers chopped
- 1 cup strawberries cut in half
- 1/4 cup dried cranberries
- 2 tbsp sliced almonds
- 2 tbsp crushed pecans
IF you would like a dressing the best to go with is a raspberry vinaigrette!
Instructions:
1. Simply chop & dice vegetables & fruits
2. Throw all ingredients together and mix well
and VOILA!
The taste of summer in one giant delicious bowl!
